John Playford's dancing books
can be pricey to pick up, even in facsimile and transcription, but worth the money if you can afford it. This isn't the only, earliest, or most detailed work on old English dances, but it is possibly the most influential one.
You'll be hard pressed to find a definitive album/CD of Playford dance music. The collection includes over 100 dances, and everyone has a different set of favorites.
